At thirty-four Marcus is one of the most talented chefs in the North West. Having maximised his opportunities to learn personally from some of the biggest names in the catering profession, he now brings to his own business an exceptional level of quality and expertise.

 

Career Synopsis

1993 - 2001 Chester Grosvenor Hotel
 

The five star rated Chester Grosvenor Hotel is considered one of the North West's Premier eating venues. It's famed "Arkle" restaurant has held a coveted Michelin Star for the past fourteen years.

Positions Held: Joined as 1st Commis Chef progressing rapidly through to Senior Sous Chef (No 2 in Charge)

 
In addition to the in-house catering options, he launched and managed their outside catering division, winning contracts to cater for all functions at the Earl of Derby's residence Knowsley Hall (see www.knowsley.com) and the Duke of Westminster's residence, Eton Hall. As such he has run the catering for a number of high profile events including Coronation Street actor Tracy Shaw's wedding (covered by OK! Magazine), the NSPCC Charity Ball (supported and attended by HRH Prince Andrew) and The Conservative Party Conference in Blackpool.
   
Improved the quality of the Banqueting and Private Dining options to Arkle standards thereby extending the Michelin Star to all areas of hotel catering.
   
Developed under the tutillage of Paul Reed (formerly Dorchester Hotel, Park Lane, London) and latterly Simon Radley (Life Magazine Chef of the Year 2001).
 
1990 - 1993 Shaw Hill Hotel Golf & Country Club
   
Chef de Partie at this four star rated private golf club and country club based in Chorley, Lancashire. Broad exposure incorporating society weddings and golfing dinners.
